Walsh, a member of the Gilbey's family (which owned a popular gin distillery), was tasked with coming up with a new drink that would appeal to the Irish market. After much experimentation, Walsh finally hit upon the winning formula for Baileys: a mix of Irish whiskey, cream, and chocolate.
The first batch of Baileys was produced in November 1974, and it quickly became a hit in Ireland. In the 1980s, Baileys began to be exported overseas, and it is now available in over 180 countries.
