Alipus San Juan Mezcal is made in the town of San Juan del Rio in the state of Oaxaca, Mexico. It is produced by Eduardo Sanches, who has been making mezcal for over 30 years. The agave used to make this mezcal are grown in the nearby Sierra Madre Mountains and are harvested after they reach maturity (around 8-10 years old).
The Alipus San Juan Mezcal has a distinctively smoky flavor, which comes from the traditional method of roasting the agave hearts in underground pits. This mezcal is also double distilled in copper stills.
