How is Scotch Whisky Made?

Scotch Whisky is prepared after a long process of malting, mashing, fermentation, and distillation. It is then made more flavourful through maturation. Let's understand the process in detail.

Malting

At first, the Barley is soaked inside a water tank called steep for a couple of days. The soaked seeds are then spread throughout the malting floor for germination. Germination is an essential step in Scotch Whisky preparation as it produces enzymes that solubilise the starch present in Barley.

That's from where the sugar originates. The entire malting process takes about a week or 12 days to complete. In this stage, Barley is turned to the right temperature. After germination, the Barley is dried inside the kiln.

Mashing

Mashing, as the name signifies, is the process where dried malt is converted into grist. It is then combined with water within a mash tun. This causes the soluble starch to convert into sugar and then a liquid named wort. All the residues produced during the process are used as animal fodder later.

Fermentation

In this step, the alcohol is prepared. Wort which was earlier produced in the mashing step is mixed with yeast to make the alcohol. It also produces wash, a liquid substance with low alcohol strength and other residues (after two days).

Distillation

The produced liquid is then heated in the pot stills. It is converted to vapour and transferred to a cooling plant for condensation. Condensation is a process where vapour is converted back into liquid.

Keep note that the distillation process is repeated twice. It's done to ensure that the liquid does not contain any unfermentable matter. The Whisky is then run for some time unless it reaches a satisfactory standard. Once it does, the Whisky is transferred to the receiver. The ultimate product should not contain the liquors from the last and first runs.

Maturation

As mentioned earlier, Scotch whiskies are matured in oak wood casks. During maturation, evaporation could occur. The time taken for the complete maturation of Scotch Whisky is about 15 years. It may also take more time, depending on the quantity. After maturation, the liquor is blended with other whiskies for varied tastes.
