Pernod is the oldest anise liqueur in France, made from distillates of star anise and fennel. It has a low liquorice content that sets it apart from pastis or other similar drinks like absinthe-which was produced at their factory as well until 2005 when they reformulated to avoid any confusion with those who were trying out this new flavor combination known simply "absinth." The original recipe included wormwood but today's version doesn't, instead we get peppermint oil added during production for something extra refreshing about ten years ago!
